Tom Collins
Created at the Limmer's Hotel in London in the mid 1800's, this is a variation on the John Collins cocktail (which was named after a barman there).
This became increasingly popular after World War I after the veterans took a love for it back to the US.
This is a sweeter cocktail, with no bitterness from quinine in a tonic. The lemon juice adds a refreshing edge to the sweetness from Old Tom gins and the sugar syrup.
Ingredients:
45ml Old Tom Gin (We love this with Hernö Old Tom Gin, but any Old Tom Gin will work)
30ml Freshly squeezed Lemon Juice
15ml Sugar Syrup
60ml Soda Water / Carbonated Water
To Garnish
Slice of Lemon
Maraschino Cherry
Method:
Take a highball glass filled with ice, and pour in the Old Tom Gin, lemon juice and simple syrup. Fill up with the soda water and stir gently. Garnish with a slice of lemon and a maraschino cherry.
