Copalli Cacao Rum
Copalli Rum is made in the rainforest in southern Belize. With three core businesses - the Copal Tree Farm, where they grow and harvest the sugar cane, the Copal Tree Distillery that makes the Copalli craft rum, and their eco-tourist Copal Tree Lodge, their mission is both social and environmental.
By providing rewarding jobs for the local people to support their families, they will not rely on the logging industry, that is destroying the rainforest and the ecosystem. This will help to preserve the much needed rainforest, and with the lodge, they can positively promote the region. Good to know that to set up these facilities, no part of the rainforest was cut or destroyed.
Copalli Craft Rum is made using only three ingredients - freshly pressed juice from the organically and sustainably grown sugar cane, rainwater from the semi-tropical climate, and yeast (which is needed to start the fermentation process).
To make Copalli Cacao Rum, the sugar cane juice is distilled in their column still and infused with organic cacao nibs. The result is a delicious and unique cacao rum and containes no additives or colours. It has intense notes of Belizean chocolate with a hint of ripe berries and citrus, which leads to a smooth, well balanced cacao taste.

Copalli Cacao Rum is delicious when sipped on the rocks, and perfect for cocktails.
For a twist on the classic Espresso Martini, add Copalli Cacao Rum instead of Vodka. Add 60ml rum, 20ml coffee liqueur, 40ml fresh espresso and 20ml sugar syrup into a cocktail shaker filled with ice. Shake, shake, shake until cold and fine strain into a chilled glass. Top with 3 coffee beans and/or cocao powder.
