Hernö Old Tom Gin
Based in Dala (between Stockholm and Gothenburg) in Sweden, Hernö Gin is the first dedicated gin distillery in Sweden. They use hand hammered copper stills (which they have named Kierstin and Marit) to craft multi-award winning organic gins from natural botanicals.
For their Hernö Old Tom Gin they use their distilled gin (Hernö Gin) as the base, and add an extra amount of Meadowsweet in the distillation. After diluting to just the right abv, they add just a touch of sugar.
This sweetening of the gin isn't purely to add sweetness (of course it does do that), but it assists in livening the botanicals in the gin even further. Floral notes are lifted, a wider array of juniper is released and it makes the gin even smoother in the mouth.
The flavour and aroma profile of this gin really is something quite special. On the nose you are greeted by a really full bodied aroma with woody spice. This follows up with a really bright, almost juicy juniper note and delicate florals.
As mentioned, its a really smooth gin in the mouth. There is a sweetness, but it is definitely not over-powering, delicately light, and it brings botanical notes to the fore. A delicious crisp juniper comes through, enhanced with pine flowers. Through to the finish, this develops into more of the floral sweetness with woody spice notes, with the juniper present (but cerrtainly not overpowering) all the way to the end.

Perfect Serve
Having recently won the IWSC World's best Gin & Tonic in conjunction with Double Dutch Indian Tonic, we would definitely recommend this as a perfect serve. Somewhat unusually, we would recommend this one drunk a little stronger though, with the sweetness of the gin allowing this to be enjoyed this way. In a glass filles with large cubes of ice and 50ml of the gin, slowly pour in 100ml of the tonic. Garnish with a slice of lemon, or lemon zest.
