Isle of Raasay Single Malt Whisky (Batch II)
To create their second release Single Malt whisky, the Raasay Distillery take two Isle of Raasay spirits – one peated and one unpeated. They then mature each of these seperately in three different casks – first fill Rye whiskey, fresh Chinkapin oak and first fill Bordeaux red wine casks.
These six recipe casks are then married together to create the perfect dram with a real elegance, complexity and depth of character.
As the name would suggest, every drop of spirit is distilled, matured and bottled on the Isle of Raasay using water from their well: "Tobar na Ba Bàine" (the Well of the Pale Cow).
This second release was distilled between 22/11/17 and 27/2/18. Vattting was 23/7/21 to 16/8/21 and then bottling started 17/8/21.
The flavours of this whisky truly represent the signature Isle of Raasay style: lightly peated with rich dark fruit. Raasay wanted to emulate some of the older styles of Hebridean single malts, with subtle, fragrant smokiness balanced with dark fruit flavours.
