Poetic License Old Tom Gin
Reminiscent of the types of gin that were enjoyed in the 1800's, Old Tom Gin's are sweeter - and have been making a come back recently.
With theirs, the Poetic License Distillery in Sunderland (North UK) have made a gin which is sweeter than their Dry Gin, but with a touch of pepper. The botanicals they use enhance the sweeter taste, and the oak casks they use continue to add additional flavour and colour. The inclusion of hibiscus and rose petals infuses their distinct character within the gin, also adding a delightful rose gold tinge.
On the nose this gin is quite aromatic, with distinct floral aromas. However, with its juniper back note there is no forgetting this is a gin! On the palate the sweetness really comes through, tempered with the pepper spice - the sugary petal flavours blend perfectly. The finish continues gently with the peppery notes lingering

Perfect Serve
Whilst this can be enjoyed with tonic, we loved this as a Gin & Ginger. In a large glass filled with ice add 50ml of the gin. Gently pour over 150ml of Fentimans Ginger Ale, and garnish with a slice of apple.
