Starward Nova Whisky

Starward create their Whiskies always thinking about the ethos behind their company. They want to create "Whisky for a curious, food obsessed generation". The distillery is based in Melbourne, which is the 'foodie' capital of Australia. There they believe the focus should be on the flavours, on not the 'airs and graces'.

They use red wine barrels to age their whisky, and all the ingredients are sourced within an hours drive. The wildy varied Melbourne weather also leds a specific character to their whiskies. They even coined a name for this "elemental maturation", and its this they say ensures their whisky is aged in three years - and draws out their signature fruity flavours. The barrels used to mature their Nova whiskey previously held Australian shiraz, cabernet and pinot noirs.

The whisky which goes into these barrels starts our using Australian Malted Barley. Their single malt whisky is double distilled, and fermented using brewers' yeast, which gives a distinct, and bold flavour. 

When filling the barrels they do this which a whisky which has a lower alcohol proof. This ensures that their whisky captures more of the red wine fruit characteristics and tannins from the barrels.

The end result of this process is a whisky with a bright aroma, red berries and orchard fruits joined with a delicate oak spiciness. On the palate the flavours develop, giving hints of a rich red berry dessert, joined with vanilla, spice and a touch of caramel. The finish is exceptionally well balanced and lingers on the tongue. The sweetness gently fades, but the other flavours remain.

Perfect Serve

Really delicious sipped straight, slow and savoured. However it also works well in the mix - try a Berry Smash. Add 50ml of whisky, 6 raspberries, a teaspoon of berry jam and 10ml of lemon juice into a shaker and shake hard for 15 - 20 seconds. Pour into a glass (no straining needed), and garnish with a sprig of mint.
