Edinburgh Gin Seaside
With their Seaside variant, Edinburgh Gin have been inspired by the East Coast beaches near Edinburgh.
Originally made with botanicals which were foraged from the shoreline, this is Edinburgh Gin's first collaboration with the Heriot-Watt University's Brewing & Distilling MSc Course.
Together they sourced marine plants which scurvy grass (which gives a mild fresh spiciness), bladderwrack (which adds a light minerality, and gentle sweetness) and ground ivy (which has a fresh aroma and balances the other botanicals). These give the unique Seaside aspect to the gin, which are then enhanced and complimented with aromatic spice notes from grains of paradise, coriander and cardamom.
The result is a gin which is definitive in its juniper flavour, but with a delicate salinity balance out but a light sweetness.

Perfect Serve
Seaside Gin makes for a bracingly refreshing gin tonic. In a large copa glass, pour 50ml of the gin and add 50 - 200ml of tonic water (depending on your preference). We like this with Fever-Tree Premium Indian Tonic, as the slight sweetness of the tonic balances the salinity of the gin. Garnish simply with a slice of lemon.
