Pickering's Gin

Based on an original Bombay recipe which dates back to July 1947, it resurfaced after 66 years once distillation started at Pickering's Summerhall distillery.

The original was tailoried to the tastes of the day (a gin full of fragrant spices and fresh citrus fruits, which was what was expected in the days of the Raj). However, tastes change and by the time the recipe was discovered in 2013 a softer, smoother gin was what was being enjoyed.

The secret to the Pickering's gin which is known, loved, and well awarded nowadays is a bain-marie heating system for the stills. This ensures the botanicals have a slow and leisurely simmer, which means the subtle, softer flavours come out.

The nine botanicals which are used are Juniper berries, coriander, cardamom, angelica, fennel, anise, lemon, lime and cloves. 

On the nose this gin has an emphasis on the coriander, backed up by piney juniper. There is a delicate citrus touch around the edge.

The palate begins fresh, again with the piney juniper flavours, which are joined with a refreshing lemon zest. In the background, a delicate floral note skips around the tongue, joined by lemon, peppercorn and the fennel.

Juniper remains the prominent flavour, typical of a classic gin, finishing dry with light residual hints of fennel and clover.

Perfect Serve

As a classic gin and tonic we really enjoyed this, but it also works really well in cocktails, giving the classic gin flavours.

For a refreshingly dry gin and tonic take a large glass filled with ice and add 50ml of the gin. Gently pour over 150ml of tonic (we liked Fentimans Indian Tonic) and stir gently. Garnish with a slice of lemon.

For a little flavour, switch our the Indian Tonic for Pink Grapefruit or Valencian Orange tonic, which works just as well.
