Hapusa Himalayan Dry Gin
The history of Hapusa gin starts in 2015. Two bar-owners in Delhi recognised that the world was becoming ablaze with new gins. Confident that, in the birthplace of the 'gin & tonic' there would come many gins they expectantly awaited for exciting Indian gins to serve in their bar.
They waited, and nothing came - so, taking things into their own hands, they experiment a lot. India is rich in botanicals, fruits and spices - so they tried a lot of recipes before in 2018 finally coming up what was to become Hapusa Himalayan Dry Gin.
Interesting fact: Juniper in Sanskrit is called Hapusa, hence the name of the gin!
In creating their gin they use juniper foraged from the Himalayan pine forests. This they distil in their still (called Agatha) along with a number of botanicals which would be found in many Indian kitchens. Turmeric, mango, ginger, cardamom, coriander seeds, gondhoraj limes and almonds. These are added using a 'one-shot' distillation method, blending the flavours perfectly.
The resulting gin has a vibrant nose, with lime immediately greeting you. The piney juniper comes through afterwards tantalising the senses.
On the palate ginger and mango develop which pairs with delicious citrus notes. These blend further with coriander and juniper adding a little heat. These develop, with further spices in the background before floral notes brighten the palate at the end. A final touch of cardamom enlivens the taste buds.
Perfect Serve
This is easily enjoyed as a sipping gin. To do this we recommend serving straight from the freezer.
However it also makes a delicious gin & tonic - paired with (unsurprisingly) and Indian Tonic. Take a large glass filled with ice and add 50ml of the gin. Gently pour over 150ml of tonic, and squeeze in a little lime juice. Garnish finally with a few juniper berries.
