Two Stacks Irish Whiskey - Dram in a Can

In creating Two Stacks, there was a desire to blend not just whiskey, but also the very best of contemporary Irish flavour and the real heritage of distilling.

Historically in Ireland, merchants and grocers would blend and age their own whiskey blends. They would select from distilleries and then chose their own casks in which to age. Over the last 150 years this heritage has slowly been on the decline.

Two Stacks wanted to change this. Relying on traditional techniques, they chose whiskies, blend and cask. Then through taste and nose they decide when the Whiskey has reached its maturity and then empty and hand label each bottle.

For their Dram in a Can Two Stacks wanted to create a truly distinctive Irish Whiskey, but one for the contemporary palate. To do this they created a blend of grain whiskey's aged in virgin oak and bourbon oak casks. A Pot still whiskey which has been aged in Oloroso Sherry Casks. And finishes with a bourbon cask matured double-distilled malt, and a peated malt aged in bourbon casks.

On the nose there is a sweetness, joined by warm butter and a hint of peach tea. It is delicately sweet and spicy whiskey on the palate, with blackberry notes, butterscotch and toasted oak. The finish is long, with a playful warm honey note.
