Diplomatico Reserva Exclusiva Rum
Diplomático's distillery is situated at the base of the Andes Mountains in Venezuela. They were originally established in 1959 and have been family owned and operated since 2002.
They distil using a variety of different methods, depending on the rum (continuous column stills for light rums, batch kettle for intermediate and pot stills for their complex rums). These different methods help ensure each of Diplomático's rums has a defining character and profile. This is further enhanced by their aging process, which depending on the rum uses different casks.
After the distillation and ageing, the real skill comes into play when Tito Cordero (the distillery's Maestro Ronero - or Rum Master) and his team combine these matured spirits to create complex rums. It is the Maestro's responsibility to supervise and ensure rums that capture the best balance and roundness of flavours and aromas are created.
To create their Reserva Exclusiva Rum, Diplomático creates a blend of exclusive rums which have been aged for up to 12 years (good things don't come quickly!). This is a molasses based rum which uses the copper pot stills and is matured in whiskey barrels, all of which give it its unique and delicious flavours - and ensured it has won many awards.
On the nose it opens with notes of orange peel, toffee and licorice. There is also an almost gingerbread quality to it as well. On the palate there is a distinct smoothness, and the toffee again comes through, this time joined with cocoa and vanilla. Rich plum flavours are joined with a little spiced oak, and a hint of pepper. The finish is long and lingers perfectly, leaving a hint of sweet coffee and a hint of oak.

Perfect Serve
This is delicious served neat or on the rocks, but also works well in cocktails. For a classic, try an Old Fashioned Cocktail. In a mixing glass half filled with ice add 50ml of the rum, 5ml of sugar syrup, and 3 large dashes of Angostura Bitters. Stir well and strain into an old fashioned glass filled with ice. Garnish with a twist of orange peel.
