Wildjac Apple & Elderberry Gin
Based in the Wyre Forest, to the South West of Birmingham in the UK, Wildjac strive to produce a range of sustainable and eco-friendly premium botanical spirits. To this end, they hand-craft their drinks using only 100% natural ingredients which (where possible) they source locally.
For their latest edition, their Apple & Elderberry Gin, they have created (arguably) the ultimate autumn gin (but delicious enjoyed any time of the year!). It's a deliciously fresh combination of ripe, crisp apples and fruity berries. Deliciously fruit forward, this is one for those who like a gin full of delicious fruity flavours.
The botanicals they use are Angelica, Orange, Organic autumn bliss Raspberries and Shropshire prune damsons from the Augernik Fruit Farm (near the distillery), Coriander and of course Juniper.
On the nose this has a hint of juniper, which melds perfectly with rich berry aromas. On the palate there are juicy damsons, sweet raspberries, apples and juniper. All blending perfectly. The finish has floral notes, lightening it - but it remains full of fruit, almost jam like.

Perfect Serve
This works particularly well when paired with a more botanic tonic, such as Thomas Henry Botanical Tonic. Take a large glass filled with ice and add 50ml of the gin. Gently pour over 150 - 200ml of your chosen tonic, and stir gently. Garnish with a thin slice of crisp apple.
