Four Pillars Sherry Cask Gin
Inspired by American Old Tom style gins, Four Pillars have created a number of barrel aged gins. Their first was using Chardonnay casks, and in 2018 was followed by this, their Sherry Cask gin.
Their Sherry cask solera is made up of 42 casks. Some of these went to Australia from Spain, and some are from Australian Apera (a fortified wine). The colour has deepened as the casks age, and residual sherry characters are underpinned by pine oil notes.
This is a rich, layered gin with delicious fruit and nut flavours. It finishes with a subtle and and surprising sweetness from the tweak of Amontillado Sherry Four Pillars add during bottling.

Perfect Serve
Maybe unusually for us, we don't recommend this gin to be used in a Gin & Tonic. It's perfect for sipping (maybe with an ice cube or two) and great in more elaborate cocktails though!

WOWW !!!!This Gin was a surprise in many ways. The Sherry part of it makes the Gin even more adventures. A gentle start that opens up to a wide range of flavours. Just take a sip and close your eyes.
